Ingredients

  • 500g butter beans (can or jar)
  • 1/2 cup sundried tomatoes
  • Two cloves garlic
  • 1/2 cup nutritional yeast
  • Juice of one lemon
  • 1/2 tsp chilli flakes
  • Pasta of choice
  • Chopped basil or parsley
  • Parmesan to serve (plant-based if preferred)

Method

  • Drain the butter beans and place them in a blender along with the sundried tomatoes, garlic, yeast, lemon juice and chilli flakes, and blend until you've got a smooth sauce.
  • Meanwhile, put the pasta on to boil in a pan of salted water, making sure to reserve half a cup of the pasta water.
  • Pour the contents of the blender into a saucepan over a low heat and give it a good stir, adding in the pasta water which will help to thicken it up.
  • Once the pasta has cooked, drain it and add it to the pan with the sauce, making sure everything is fully coated.
  • Top with some additional sundried tomatoes, herbs and parmesan if you like, and you're ready to serve.
